Lima Beans

Lima beans are a perennial tropical bean that grows well in hot, humid conditions of south west Madagascar. They are rich in the mineral manganese, a key nutrient in brain development. They are also high in fiber and plant-based protein.

Season: Sept – Feb

Lima beans, often known as butter beans, come from a variety of places around the world. Some of the major countries with Lima Beans Exporters include:

  • Argentina: Argentina is the world's leading Lima Beans exporter. Argentina has vast fields that receive plenty of sunshine, making it perfect for cultivating large-seeded lima beans with luscious, creamy flesh. These beans are distinguished by their mild, somewhat sweet flavor and smooth texture.
  • United States: The United States is a significant Lima beans supplier. Beans are grown in a variety of terrains, from plains to hills. The United States cultivates a larger variety of lima beans, including smaller Sieva beans and baby limas. This variability serves a wide range of taste preferences and culinary uses.
  • Egypt: Egypt's sun-kissed plains produce inexpensive lima beans that are smaller, lighter, and have a mild flavor.
  • Canada: In Canada, quality is paramount! Their medium-sized, creamy-colored lima beans have a hint of earthy flavor, making them ideal for uniformity in culinary dishes.
  • Turkey: Turkey produces larger and harder beans with a distinct, slightly sweet, and nutty flavour. It is a major Lima beans exporter.
  • Madagascar: Madagascar is a newer player in the export market with its distinct "haricots blancs" type, recognized for their earthy flavor and greater size.

Culinary Uses:

    • Side dishes: Lima beans can be boiled or steamed and eaten as a side dish. They can also be mashed, roasted, or sautéed with herbs and spices to enhance flavor.
  • Soup & Stews: Lima beans make a hearty ingredient to soups and stews. They provide protein, fiber, and creaminess to various recipes.
  • Lima Bean Hummus: Lima bean hummus has a creamy texture, nutty flavor, and high protein content. Roast the beans for added flavor, then combine with tahini, spices, and your imagination. Enjoy with pita, vegetables, or get creative!
  • Salads: Lima beans can be used in cold or warm salads. They offer protein and substance to salads while also providing a creamy smoothness. Lima beans work well with a variety of vegetables, herbs, and salad dressings.

Other uses:

  • Animal feed: Lima beans are occasionally used as animal feed.
  • Industrial applications: Lima beans can be used to produce starch, flour, and other products.
  • Heart health:

  • High in fiber: Each cup of lima beans has 9 grams of fiber, which helps lower LDL ("bad") cholesterol and inflammation, both of which are essential for heart health.
  • Antioxidant-rich: These beans contain polyphenols, which protect your heart and blood vessels, improve their function, and prevent inflammation.
  • Source of potassium: This mineral helps regulate blood pressure, which is another important element in heart health.

  • Blood sugar control

  • Protein and fiber combo: The combination of protein and fiber in lima beans slows carbohydrate absorption, resulting in more stable blood sugar levels and perhaps lowering the risk of type 2 diabetes.
  • Magnesium content: This mineral is essential for how your body uses insulin, which contributes to stable blood sugar levels.
  • Low fat choice: Lima beans are a low-fat option that can help with weight loss and potentially improve heart health by lowering LDL ("bad") cholesterol levels.

  • Digestive health:

  • Fiber powerhouse: As previously stated, lima beans' high fiber content helps healthy digestion and regularity.
  • Prebiotic properties: Lima beans include prebiotics, which nourish the beneficial bacteria in your gut, resulting in a healthier digestive system and maybe improved immunity.

  • Other Potential Benefits:

  • Iron source: Lima beans are high in iron, which is essential for preventing anemia and especially advantageous for women and vegetarians.
  • Folate content: These beans are high in folate, which is essential for pregnant women and for neural tube development in newborns.
  • Muscle building: Due to its high protein content, lima beans are an excellent choice for creating and maintaining muscular mass.

    • Lima Bean and Sausage Skillet: Savory sausage, onions, bell peppers, and garlic are cooked with lima beans to create a tasty skillet dish. The combination of ingredients makes for a quick, simple, and tasty meal that's perfect for hectic weeknights.
    • Lima Bean and Ham Hock Soup: It is a rich and soothing soup with smoked ham hocks, onions, carrots, celery, and seasonings. Simmered slowly, this soup creates rich aromas as the ingredients merge together, resulting in a filling dinner ideal for chilly days.
    • Lima Bean and Vegetable Stir-fry: Flavorful and nutritious stir-fry with crisp-tender lima beans, colorful veggies, and soy sauce, garlic, and ginger. This meal, served over rice or noodles, has an excellent combination of flavors and textures, making it a favorite of both vegetarians and meat eaters.
  • Lima Bean and Corn Succotash: It is a traditional Southern side dish that includes creamy lima beans, sweet corn kernels, bell peppers, onions, and crispy bacon. Seasoned with butter, salt, and pepper, this vibrant succotash has a delicious blend of flavors and textures, making it a popular choice for summer events.
  • Lima Bean and Rice Pilaf: It is a fragrant and savory dish that combines soft lima beans, onions, garlic, spices, and fluffy rice with fresh herbs. This flexible dish can be served as a filling main course or a savory side dish to compliment a variety of proteins.
