There are various main sources of cinnamon; each has its own distinct characteristics and taste profile:

Ceylon cinnamon (Cinnamomum verum): It is native to Sri Lanka. It is considered as the "true" cinnamon, it has a delicate, sweet, and warm taste with a subtle fruity fragrance. Its sticks are thin and light brown, with many fine layers that peel off very easily. Ceylon Cinnamon supplier also includes Madagascar, India & Seychelles.

Cassia cinnamon (Cinnamomum cassia): It is considered to be the native to China, Vietnam, Indonesia, and other parts of Southeast Asia. It is more common and less expensive than Ceylon cinnamon. It has a stronger, spicier, and slightly bitter taste with a more strong smell. Its sticks are thicker and darker brown, with fewer layers.

  1. Ceylon cinnamon is often used in sweet dishes like pastries, desserts, and beverages. They are also suitable for savoury applications in curries and stews.
  2. It is also used widely in Savory dishes like curries, stews, soups etc.
  3. Cinnamon Madagascar is also used in Potpourri to provide a natural and refreshing scent.
  4. It can also be used as a cleaning agent.

Cinnamon has a long history of traditional uses for its health benefits, scientific evidence is still evolving. Here's a breakdown of the few potential benefits of cinnamon:

  1. Antioxidant Activity: Cinnamon consists of compounds like cinnamaldehyde and phenolic acids, which exhibit antioxidant properties. These may help shield cells from destruction caused by free radicals, potentially playing a role in reducing chronic disease risk.
  2. Blood-Glucose Management: Studies suggest cinnamon may improve insulin sensitivity and blood sugar control, potentially benefiting individuals with type 2 diabetes. Although, the evidence is mixed and more research is needed to understand its effectiveness and optimal dosage.
  3. Inflammation-reducing Effects: Various studies indicate potential anti-inflammatory properties of cinnamon, which may be beneficial for various conditions like arthritis. However, more research is needed to confirm these effects and understand their mechanisms.
  4. Other Benefits: Some studies prove the potential benefits in areas like cognitive function, oral health, and even cancer prevention. However, these areas require further investigation and confirmation before concluding any definitive decisions.

Baked Treats: Classic cinnamon rolls, apple cinnamon muffins, banana bread with a cinnamon swirl, or pumpkin spice latte cookies can be baked out of cinnamon.

Desserts: Decorate a simple fruit crumble with a sprinkle of cinnamon, make a creamy rice pudding with cinnamon sticks, or indulge in a delicious apple pie infused with cinnamon warmth.

Comforting Drinks: Feel relaxed with a soothing cup of hot chocolate spiked with cinnamon, prepare a refreshing iced tea with a cinnamon twist, or enjoy a cosy apple cider simmered with cinnamon sticks.

Curries Delight: Infuse depth and warmth to Indian curries like butter chicken or Thai curries like massaman, or give Moroccan tagines with a touch of cinnamon magic.

Marinades: Spice up the taste of meats like chicken, lamb, or pork with cinnamon-infused marinades or rubs, perfect for grilling or roasting.

Soups and Broths: Enhance the flavours of vegetable soups, lentil stews, or even tomato bisque with a touch of cinnamon for a subtle yet delightful variation.

Rice and Grains: Mix up quinoa with cinnamon and raisins for a flavourful side dish, or add a pinch to couscous or rice pilaf for a warm and aromatic experience.
